Vegetarian Cobb Salad

With Paisley Farm Five Bean Salad, drained

1 24oz jar Paisley Farm Five Bean Salad, drained
6 cups fresh spinach
1 cup cherry tomatoes, halved
4 eggs, in shell
1 cup blue cheese, crumbled
1 red onion, sliced
1/3 cup red wine vinegar
½ cup olive oil
Salt and pepper to taste


  1. Place eggs in a small pot and cover with cold water.
  2. Place over high heat and bring to a boil. Once boiling, remove from heat and allow eggs to sit in hot water for 12 minutes.
  3. Drain, peel and chop. Setaside.
  4. Divide spinach between 4 bowls or plates. Top with remaining ingredients and enjoy!
