Ingredients

16oz ribeye steak
3 tablespoons butter
.5oz fresh rosemary
.5oz fresh thyme
2 garlic cloves
Salt
Course ground black pepper
2 teaspoons grapeseed oil
Paisley Farm Bean Salad

Instructions

  1. Remove steak from fridge. Liberally season all sides with salt and pepper. Allow steak to sit for 15-30 minutes to come up in temperature.
  2. Wipe 2 teaspoons of grapeseed oil evenly on the inside of a cast iron pan. Place pan on medium high heat. When you see small whisps of smoke from the oil place your steak in the pan.
  3. Sear each side of steak for two minutes per side including the edges. Continue to flip the steak every 2 minutes after all the sides have a nice sear built up. Add in your fresh rosemary, thyme, garlic and butter. Baste this herb butter all over the steak and continue to flip every 2 minutes or so.
  4. Every steak is different so time will not be constant but using this method, Medium rare is about 10-12 minutes total cook time. If you have an instant read thermometer you will cook to the following temps 120ºF rare, 130ºF medium rare, 140Fº medium, 150ºF medium well and 160ºF well done.
  5. Once your steak is at desired temperature, remove it from the pan and let rest for 5 minutes. Serve with Paisley Farm Bean Salad as a ready to go side and enjoy!
