Southwest-Style Cobb Salad with Cowboy Caviar

Ingredients

For the Southwest Ranch Dressing:
½ cup mayonnaise
½ cup sour cream
3 tbsp. milk
2 tbsp. powdered ranch dressing mix
2 tsp. taco seasoning
Pinch cayenne pepper (optional)
3-3 ½ tsp. lime juice
For the Salad:
4 cups lettuce, roughly chopped
½ red onion, diced
¾ cup chopped tomato
½ avocado, diced
1 cup diced or shredded cooked chicken
5 bacon slices, cooked and crumbled
½ - ¾ cup Paisley Farm Cowboy Caviar, drained
¾ cup cubed Colby Jack cheese (or cheese of choice)

Instructions

Instructions for the Dressing:
  1. Add all ingredients to a small bowl and whisk until smooth. Set aside.
Instructions for the salad:
  1. Spread the lettuce evenly over a platter or large plate. Arrange the red onion, tomatoes, avocado, chicken, crumbled bacon, Cowboy Caviar, and cheese over the lettuce.
  2. Drizzle with the Southwest Ranch Dressing. Serve immediately with extra dressing on the side and enjoy!
