Southwest-Style Cobb Salad with Cowboy Caviar

Ingredients
For the Southwest Ranch Dressing:
½ cup mayonnaise
½ cup sour cream
3 tbsp. milk
2 tbsp. powdered ranch dressing mix
2 tsp. taco seasoning
Pinch cayenne pepper (optional)
3-3 ½ tsp. lime juice
For the Salad:
4 cups lettuce, roughly chopped
½ red onion, diced
¾ cup chopped tomato
½ avocado, diced
1 cup diced or shredded cooked chicken
5 bacon slices, cooked and crumbled
½ - ¾ cup Paisley Farm Cowboy Caviar, drained
¾ cup cubed Colby Jack cheese (or cheese of choice)

Instructions
Instructions for the Dressing:
- Add all ingredients to a small bowl and whisk until smooth. Set aside.
Instructions for the salad:
- Spread the lettuce evenly over a platter or large plate. Arrange the red onion, tomatoes, avocado, chicken, crumbled bacon, Cowboy Caviar, and cheese over the lettuce.
- Drizzle with the Southwest Ranch Dressing. Serve immediately with extra dressing on the side and enjoy!
