Paisley Harvest Barley Soup
1 cup yellow onion, diced
½ cup carrots, diced
½ cup celery, diced
1 24-oz jar Paisley Farm Five Bean Salad, drained and rinsed
2 cups Paisley Farm Organic Marinated Mushrooms, drained and rinsed
2 teaspoons fresh thyme
1 cup pearl barley
2 quarts vegetable stock
Salt and pepper to taste
- In a large pot, coat vegetables in about two tablespoons olive oil and cook over medium heat, until tender.
- Add thyme, barley and stock. Bring to a boil and then reduce to a low simmer until barley is tender, about 40 minutes.
- Season with salt and pepper to taste.
- Serve and enjoy!
