Paisley Harvest Barley Soup

Yields 8-12 servings


1 cup yellow onion, diced
½ cup carrots, diced
½ cup celery, diced
1 24-oz jar Paisley Farm Five Bean Salad, drained and rinsed
2 cups Paisley Farm Organic Marinated Mushrooms, drained and rinsed
2 teaspoons fresh thyme
1 cup pearl barley
2 quarts vegetable stock
Salt and pepper to taste


  1. In a large pot, coat vegetables in about two tablespoons olive oil and cook over medium heat, until tender.
  2. Add thyme, barley and stock. Bring to a boil and then reduce to a low simmer until barley is tender, about 40 minutes.
  3. Season with salt and pepper to taste.
  4. Serve and enjoy!
