Orange and Sweet Beet Salad Over Whipped Feta

Ingredients

8 oz. feta cheese, softened to room temperature
5 oz. Greek yoghurt (I used whole milk Greek yoghurt)
½ small shallot, finely minced
2 tbsp. lemon juice
2 tbsp. extra virgin olive oil (regular olive oil or avocado oil would also work)
¼ tsp. salt, or to taste
¼ tsp. black pepper, or to taste
1 24 oz. jar Paisley Farm Sweet Pickled Beets, well drained
2 medium/large oranges, peeled and segmented
Handful of fresh herbs, chopped (I used thyme and parsley)
¼ cup pistachios

Instructions

  1. In a medium to large mixing bowl, or the bowl of a stand mixer, add the feta cheese, yoghurt, shallot, lemon juice, extra virgin olive oil, salt, and pepper. Using a hand mixer or stand mixer, whip until the mixture is smooth and creamy.
  2. Spread the whipped feta cheese mixture onto a plate and top with the beets and orange segments. Sprinkle fresh herbs and pistachios over the top. This can be served as is, but is also great with crusty bread, pita bread, or naan bread for dipping.
