Mushroom and Vegetable Ramen Inspired Soup

Ingredients
2 tbsp. sesame oil
1 – 1 ½ tbsp. grated fresh ginger
4 – 5 garlic cloves, minced
1 bunch green onions, thinly sliced
6 – 8 cups vegetable or chicken broth
2 – 3 tbsp. soy sauce
2 tbsp. mirin or rice wine vinegar
1 cup shredded carrots
1 (24 oz.) jar Paisley Farm Marinated Mushrooms, drained
8 oz. dried ramen noodles (or similar noodle)
1 bunch baby bok choy leaves
4 medium eggs
Salt to taste
Optional toppings:
Fresh cilantro
Shredded carrots
Shelled edamame
Seaweed
Garlic chili oil/crunch
Sliced green onions
Fresno or jalapeno peppers
Instructions
- Add the sesame oil to a large saucepan or pot set over medium/high heat. When the oil is hot, add the ginger, garlic, and green onions. Cook, stirring frequently, until fragrant; about 1 to 2 minutes. Next, add the broth along with the soy sauce and mirin or rice wine vinegar. Bring this mixture to a simmer and cook for about 10 to 15 minutes.
- While the soup is simmering, add about ½-inch of water to a small saucepan and bring to a boil. Using tongs, carefully add the 4 eggs to the water. Cover and cook for 8 minutes. Next, uncover the saucepan, remove from the heat, and run cold water over the eggs for 30 to 60 seconds to stop the cooking process. Carefully peel the eggs, cut in half lengthwise, and set aside.
- After the soup has simmered for 10 to 15 minutes, add the shredded carrots and marinated mushrooms. Bring back to a simmer, add the ramen noodles and cook according to package directions. When the noodles are done, remove from the heat and stir in the baby bok choy. Salt to taste. Serve with the boiled eggs and your favorite toppings. Enjoy!





Your products are not available to me here in southern Iowa. Even Amazon doesnt carry them. I had to settle for another brand of Cowboy Caviar in order to make the Summer Pasta recipe. I hope it is just as good as yours. Sorry.
