Marinated Mushroom Pasta Salad

Ingredients
For the Dressing:
1 cup mayonnaise
2 tsp. stoneground or Dijon mustard
2 tbsp. lemon juice (about 1 lemon)
3 tbsp. apple cider vinegar
¼ tsp. garlic powder
½ tsp. red pepper flakes, or to taste
3 tsp. Italian seasoning
½ tsp. salt, or to taste
¼ tsp. black pepper, or to taste
For the Pasta Salad:
1 lb. rotini (or other short-cut pasta)
1 medium red bell pepper, diced
1 small red onion, diced
½ cup roughly chopped sundried tomatoes, drained
¼ cup tightly packed torn fresh basil leaves
1 (24 oz.) jar Paisley Farm Marinated Mushrooms, drained and roughly chopped
Instructions
- Bring a large pot of water to a boil over high heat. Add a good pinch of salt to the boiling water and then add in the pasta. Boil until the pasta is cooked al dente, about 7 to minutes, or according to package directions. When the pasta is done, drain in a colander and rinse with cool water. Drain well and set aside.
- Next, make the dressing. Add all of the dressing ingredients (mayonnaise through black pepper) to a small mixing bowl. Whisk until well combined. Set aside.
- Add the cooked pasta to a large mixing bowl, followed by the red bell pepper, red onion, sun dried tomatoes, and torn basil leaves. Mix well. Pour the dressing over the pasta mixture and mix until everything is combined and coated in dressing. Next, add the chopped marinated mushrooms and gently mix into the pasta salad. Serve immediately.
- *NOTE: If you want to make this ahead of time, store the pasta salad and the dressing separately in the refrigerator and mix together just before serving.
