Layered Sweet Beet Salad In A Jar
Paisley Farm Sweet Pickled Beets
Ingredients
4 pint-sized mason jars
1 cup arugula
½ cup cherry tomatoes, halved
4 hard-boiled eggs, chopped
½ cup pecans
½ cup blue cheese, crumbled
1 cup Paisley Farm Sweet Pickled Beets, drained
½ cup bacon, cooked and crumbled
For Dressing:
¼ cup balsamic vinegar
½ cup extra virgin olive oil
Salt and pepper to taste
Instructions
- In each jar, layer ingredients as follows:
- -1/4 cup arugula
- -2 tablespoons tomatoes
- -1 chopped egg
- -2 tablespoons pecans
- -2 tablespoons blue cheese
- -1/4 cup Paisley Farm Sweet Pickled Beets
- -2 tablespoons crumbled bacon
- Dress each salad with one tablespoon balsamic vinegar and two tablespoons olive oil. Season with salt
- and pepper to taste. Enjoy!
