Herbed Cream Cheese and Sweet Beets on Toast

Ingredients
4 large slices of crusty bread (or 8 to 10 slices of smaller crostini/baguette)
8 oz. cream cheese, softened to room temperature
1 small shallot, finely minced
1 tbsp. finely minced fresh thyme leaves
1 tbsp. finely minced fresh rosemary leaves
Zest of 1 lemon, plus 1 tsp. lemon juice
½ tsp. salt, or to taste
½ tsp. black pepper, or to taste
2-2 ½ cups Paisley Farm Sweet Pickled Beets, drained and roughly chopped (this is a little less than a 24 oz. jar)
Microgreens or sprouts for garnish
1/3 cup chopped walnuts for garnish (or other nut of your choice)
Honey for drizzling
Instructions
- Place the cream cheese in a medium-sized mixing bowl. Next, add the minced shallot, thyme, rosemary, lemon zest and juice, salt, and black pepper. Using a hand mixer, beat the cream cheese mixture on medium until smooth and well blended, scraping down the sides if needed. Set aside. (Alternately, you can use a stand mixer or mix by hand using a wooden spoon or sturdy silicone spatula).
- Next, you’ll want to toast the bread according to your desired doneness. You can either do this in a toaster/toaster oven or regular oven.
- For the oven method, place a rack on one of the top two slots in your oven. I usually place the rack on the second slot down from the top. Preheat your oven to 400 degrees F.
- Brush a very small amount of oil on both sides of the bread slices. I like to use an avocado oil spray, but any high heat oil will work well. Place the bread slices on a lined baking sheet.
- Bake in the preheated oven for about 10 to 15 minutes, flipping the bread halfway through. You’ll want to watch closely as the time will vary depending on your desired level of doneness.
- When the bread is done, remove from the oven and let cool slightly. Spread the cream cheese mixture evenly on all slices. Top the cream cheese with Paisley Farm Sweet Pickled Beets and garnish with microgreens or sprouts, chopped nuts, and a drizzle of honey.
- Serve immediately and enjoy!
