Five Bean Salad "Meatballs" with Zucchini Noodles

1 cup Paisley Farm Five Bean Salad, drained and mashed
1 egg
½ breadcrumbs or nut flour
1 tablespoon Italian seasoning
Salt and pepper, to taste
4 cups zucchini noodles
2 cups marinara
Grated Parmesan cheese, for serving


  1. In a large bowl, mix together mashed bean salad, egg, breadcrumbs and seasonings, and form into 1-inch balls. Sear in 1 tablespoon of preheated oil, until brown on all sides, and cooked through, about 5 minutes. Remove from pan and set aside.
  2. Add zucchini noodles and marinara to pan and simmer together until zucchini is tender, about 10 minutes.
  3. Divide noodles between 4 bowls and top with “meatballs” and Parmesan.
  4. Serve and enjoy!
