Burger and Pickled Beet Sliders with Blue Cheese Sauce

Ingredients
For the Blue Cheese Sauce:
½ cup crumbled blue cheese
4 oz. cream cheese, softened to room temperature
1 small shallot, minced
1 ½ tsp. lemon juice
¼ tsp. salt, or to taste
¼ tsp. black pepper, or to taste
1-2 Tbsp. milk
For the Sliders:
1 pound ground beef
½ tsp. garlic powder
1 tsp. salt, or to taste
½ tsp. black pepper, or to taste
1 Tbsp. Worcestershire sauce
1 Tbsp. olive oil for mixing into the burgers
2 Tbsp. oil for frying the burgers
1 cup Paisley Farm Sweet Pickled Beets (about three pieces of beet per slider)
About ¾ cup arugula leaves (or greens of choice)
8 slider buns
Instructions
Make the Blue Cheese Sauce:
- In a small bowl, mix the crumbled blue cheese, cream cheese, shallot, lemon juice, salt, pepper, and 1 tablespoon of milk until well combined. The sauce should be smooth and creamy enough to spoon onto the burgers but not runny. If it is still too stiff, add another tablespoon of milk and mix well. Set aside.
Make the Burger Patties:
- In a medium bowl, add the ground beef along with the garlic powder, salt, black pepper, Worcestershire sauce, and 1 tablespoon olive oil. Gently mix just until combined, being careful not to overmix as this can create a tough burger.
- Gently form the ground beef mixture into 8 burger patties, about 2 ounces each. You’ll want to press the burgers flat so they are no more than ¼-inch thick because they will shrink up during cooking.
- In a large skillet, heat 2 tablespoons oil over medium heat. When the oil is hot add the burger patties and cook for 2-3 minutes. Flip the burgers and cook for an additional 2-3 minutes, or until they have reached your desired temperature.
Make the Sliders:
- Place a small pile of arugula leaves on the bottom bun of each slider. Top with a burger patty and about 2 tablespoons of the blue cheese sauce. Top the blue cheese sauce with 3 to 4 chunks of Paisley Farm Sweet Pickled Beets. Add the top half of the slider bun and enjoy!
