Bean Salad Meatless Meatballs

1 cup Paisley Farm Five Bean Salad, drained and mashed
1 egg
½ cup breadcrumbs or nut flour
1 tablespoon Italian seasoning
Salt and pepper, to taste
Grated Parmesan cheese, for serving


  1. In a large bowl, mix together mashed bean salad, egg, breadcrumbs and seasonings, and form into 1-inch balls. Sear in 1 tablespoon of preheated oil, until brown on all sides, and cooked through, about 5 minutes. Remove from pan and set aside.
  2. Eat as is, smother in your favorite sauce, or add to a salad or pasta dish.
  3. Serve and enjoy!
