Bean Salad Pizza Hand Pies

Yields 6 Hand Pies

Ingredients

1 9”x14” sheet of pizza dough (rolled out into a rectangular shape)
4 tbsp. pizza sauce
18-24 slices salami or pepperoni
½ cup shredded mozzarella cheese
½ cup Paisley Farm Five Bean Salad
1 egg, lightly beaten
1 tbsp. grated parmesan cheese
Italian seasoning to taste
Garlic Powder to taste
Salt and pepper to taste
Flaked sea salt (course or regular salt can also be used)

Instructions

  1. Preheat your oven to 425 degrees F. Line a baking sheet with parchment paper and set aside.
  2. Roll out the pizza dough. Using a pizza cutter or sharp knife, cut the dough into 12 equal rectangles or squares. Brush 1 to 2 teaspoons of pizza sauce onto 6 of the rectangles. These will serve as the bottom half of the hand pies.
  3. On top of the sauce, layer 3 to 4 slices of salami or pepperoni. Add a heaping tablespoon or two of the shredded mozzarella cheese on top of the meat and spoon about 2 tablespoons of the five bean salad on top of the cheese. Sprinkle a few dashes of Italian seasoning over the bean salad. If desired, also sprinkle a dash of salt and pepper over the bean salad.
  4. Place the remaining 6 pieces of pizza dough on top of each half that contain the filling and pinch all of the edges closed, trying to keep the filling inside. Crimp the edges with the tines of a fork and place on the prepared baking sheet.
  5. Brush the tops and edges of each hand pie with the beaten egg. Sprinkle parmesan cheese over the top of each hand pie, followed by Italian seasoning, garlic powder, and flaked sea salt.
  6. Bake in the preheated oven for 10 to 20 minutes, or until the dough is golden brown. Serve immediately with additional pizza sauce on the side.
