BBQ Chicken and Four Bean Salad with Bacon

Yields 6 Chicken Thighs

Ingredients

6 Boneless Skinless Chicken Thighs
4 Tablespoons of BBQ Rub (pre-made is great or make from scratch!)
1 Cup of your favorite BBQ Sauce
1 Jar of 4-bean Salad
1 lb of bacon
1 Cup of bread and butter pickle brine
Optional recipe for from scratch BBQ Rub
1/2 Cup of Brown Sugar
3 Tablespoons Paprika
1 Tablespoon Kosher Salt
1 Tablespoon Coarse Ground Pepper
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
2 Teaspoons Cumin
1/2 Teaspoon Cayenne Pepper (more or less to taste)

Instructions

  1. Make and prepare Bacon Four Bean Salad. Set aside.
  2. In a one gallon zip top bag, add chicken thighs and bread and butter pickle brine. Refrigerate and allow to marinate for 2 hours.
  3. After 2 hours, remove chicken from marinade and liberally coat the thighs in rub. Discard marinade.
  4. Preheat your grill to 375º-400º and place chicken directly on the grates. Cook chicken approximately 7-10 minutes per side.
  5. When internal temp is 160º brush liberally with BBQ sauce and continue to cook for another 5-10 minutes to allow sauce to tack up.
  6. Let chicken rest at least 5 minutes, serve with Bacon Four Bean Salad, and enjoy!
