Autumn Salad with Balsamic Beets and Onions

Yields 2-4 servings

Ingredients

3 cups mixed green lettuce
1 cup Paisley Farm Balsamic Beets and Onion Salad, drained
1 cup mandarin orange or clementine segments (about 2 large mandarin oranges or clementines)
½ cup dried cranberries
½ cup candied pecans or other nuts (simple roasted or raw nuts work great too)
½ cup crumbled blue cheese
Balsamic vinegarette dressing

Instructions

  1. Add the mixed greens to a large plate or serving bowl. Top the lettuce with the balsamic beets and onion salad, orange segments, dried cranberries, and nuts. Sprinkle the crumbled blue cheese over the salad and drizzle with your favorite balsamic vinaigrette dressing.
  2. Serve immediately with extra dressing on the side.
