Ingredients

4 pint-sized mason jars
1 cup arugula
½ cup cherry tomatoes, halved
4 hard-boiled eggs, chopped
½ cup pecans
½ cup blue cheese, crumbled
1 cup Paisley Farm Sweet Pickled Beets, drained
½ cup bacon, cooked and crumbled
For Dressing:
¼ cup balsamic vinegar
½ cup extra virgin olive oil
Salt and pepper to taste

Instructions

  • In each jar, layer ingredients as follows:
  • -1/4 cup arugula
  • -2 tablespoons tomatoes
  • -1 chopped egg
  • -2 tablespoons pecans
  • -2 tablespoons blue cheese
  • -1/4 cup Paisley Farm Sweet Pickled Beets
  • -2 tablespoons crumbled bacon
  • Dress each salad with one tablespoon balsamic vinegar and two tablespoons olive oil. Season with salt
